Garlic seconds are great for processing or canning. Between 1inch to 2 1/2 inches in diameter.  Garlic may or may not have a wire worm hole, skin is missing or a few cloves may be damaged, or they are too small to sell.

  • Storage: Garlic should be stored in a cool, dry place out of direct light.  Do NOT store in the refrigerator!  Keep in a paper bag or closed cardboard box inside a cabinet in the coolest part of your house.  Garlic will keep drying out the longer it is stored.  This will make it lighter, the bulbs less dense, and even hotter and stronger.  But eventually it will dry out beyond functional use, and may even rot or mold.  Most of our Garlics were fully cured by the end of September, and thus their “shelf life” began.  In prime conditions they should store six months or more.
